As the heat creeps up to, gasp, 80 degrees here-----yes, all of you out there in sweltering heat can throw things at me now ;-)---- I start to make those midsummer dishes that I enjoy so much. Cool & spicy...
Here's one to try... and to bring to your next summer potluck!
Spicy Cucumber Salad with Peanuts
4 - 5 Large cucumbers, peeled, sliced in half lengthwise, and then sliced into half moons
2 tsp. kosher salt
3/4 C. rice vinegar
3/4 C. water
5 T. sugar
1 tsp. crushed red pepper
1/4 C. minced red onion
1/4 C. chopped dry-roasted peanuts
Method: Place cucumber slices in a colander, sprinkle with salt, and toss well. Drain for 1 hour. Place the cucumbers on towels to dry. Press down on them with another towell to dry further. Rinse and pat dry.
Combine vinegar, water, sugar, and pepper in a small saucepan, bring to a boil. Reduce heat; cook until sugar dissolves (about 10 minutes). Remove vinegar reduction from the heat and cool. Stir in the onion. Combine cucumbers and vinegar reduction in a medium bowl and toss well. Chill and sprinkle with peanuts to serve.
Added later... If you want to serve the salad for leftovers, you will want to wait to add the peanuts until you serve each bowl as the peanuts will get soggy if they are left in the salad.
