Our heat still lingers and the mere notion of turning on the oven in this scorcher makes me shudder. I wonder how long one can subsist on watermelon, popsicles, and iced tea? No, it hasn't quite come to that, but I dread adding any heat to the milieu. But we must have treats! Or snacks. Either direction, these yummy little morsels satisfy. I like them because they don't require baking, they're healthy, quick, and they're a great little something to get me through the afternoon. My kids love them, too!
Almond-Date-Coconut Cookies
1 C. almond butter (*see note)
10 large pitted dates
1 tsp. cocoa powder
1 tsp. coconut oil
1/2 C. shredded coconut
Method: In a high powered blender or food processor, blend the almond butter, dates, cocoa powder and coconut oil until it forms a paste. Transfer to a bowl and chill in the refrigerator. Once chilled, place the shredded coconut in a bowl and roll a T. of the almond/date paste into a ball and roll the ball in the shredded coconut. Store the cookies in the refrigerator.
*Note: I mix up my own almond butter using my Vita-mix. If you're using a store-bought butter, be sure it is well mixed and you may need to omit the coconut oil so the paste is not too oily).
