Clearly, the zucchini wizard waved their stripey green wands above our backyard garden and granted us a bountiful crop this year. Each morning produces another green wonder that seemingly appeared overnight. I twist it off and add it to the ever growing pile on my kitchen counter waiting for a recipe...
As of late, most of our meals contain zucchini in one form or another.
There was Melissa's Zucchini Risotto (pictured at top). A must! Seriously, go get the recipe right now!
And Zucchini Bread. Of course.
I haven't made my Mom's zucchini laced chocolate cake yet, but it's sure to grace us with its meltingly yummy presence soon. I made roasted zucchini with a spicy seasoning. Zucchini scrambled eggs with garlic and sharp cheddar and a pasta primavera, heavy laden with zucchini.
