Some "recipes" are so simple, I hardly consider them a recipe! Like this one. It's just a matter of preparing what you know and adding another layer of flavor. This sweet pineapple rice is a great accompaniment to barbecue and spicy dishes. It lends a bit of sweet, tasty relief. We enjoyed it alongside spicy black bean patties. And it's such a beautiful color, as well.
Sweet Pineapple Rice
~6 servings of cooked jasmine rice (I used 2 rice cooker cups)
~1 fresh Pineapple, to make 4 Cups
~1/2 C. raw, dark agave syrup
~1 tsp. paprika
~pinch of salt
~bunch fresh chopped cilantro
Method: Prepare rice in rice cooker, or preferred method.
Meanwhile, core and peel the pineapple and chop into big chunks to make 4 C. Use the remainder as a garnish. In a blender, blend together the pineapple, agave, paprika, and salt until smooth. (This makes a wonderful dipping sauce, as well).
When the rice is done, pour into a large bowl and sprinkle the pineapple sauce over the rice. Stir until the sauce is absorbed and thoroughly blended into the rice. Sprinkle the rice with the chopped cilantro and garnish with remaining pineapple.
