I wish you could taste this coleslaw! The photos don't do it justice. It looks unassuming enough but it's packed with a sweet, yet spicy flavor! The taste would work wonderfully alongside barbecue or even a simple stir-fry.
The sauce would be great on cold Asian noodles with veggies. mmmm. Give it a try and tell me what you think!
**Note: I call for Trader Joe's Wasabi mayonnaise. It provides the coleslaw with its heat but I also love the flavor of this mayo. (It's great with Tuna Fish). If you cannot get your hands on some (but do try!), you could substitute plain mayonnaise and add a T. or so of powdered Wasabi.
Dressing:
1 T. Dijon mustard
1 T. rice wine vinegar
1 T. lemon juice
2 T. honey
1 T. soy sauce
1 tsp. yellow miso (optional)
1/2 C. mayonnaise
1/2 C. Wasabi mayonnaise (see Note above)
To make the dressing: Place all ingredients in a blender and blend until very smooth.
Coleslaw:
1 medium Napa Cabbage
2 carrots
1 C. crushed pineapple
To make the salad: Remove cabbage core and base and chop the rest. Grate the carrots. Mix these items in a very large bowl. Add the dressing (above) and pineapple and mix thoroughly. Allow the coleslaw to sit in the refrigerator a bit to meld the flavors.
Serving Garnishes: chopped dry-roasted peanuts or Gomasio
