I have a favorite salsa I make. It isn't the only one I turn to when I have chips waiting in hand but I do find myself making this one most often. The salsa is fresh tasting, beautiful to look at, and the perfect accompaniment for a good organic corn chip!
I created this recipe based on the house salsa at the local burrito shop in our small town.
Like many of the best recipes, the amounts are variable based on your tastes and what looks pleasing. If the tomatoes are rather large and the salsa look a little heavy on the red, then add more of the other ingredients. You like garlic? Add more! If you like your salsa hot, add a couple jalapenos---my kids don't like it hot so I opt to leave them out. By all means, shape this recipe to your own taste!
Amber's Salsa Fresca ~6 -7 Roma tomatoes, diced ~5 tomatillos, husks removed, rinsed under water, diced ~ 1 large white onion, diced ~ 1 bunch fresh cilantro, chopped ~ 2 limes, juiced ~ 2 cloves garlic, pressed through a garlic press ~salt to taste ~Dice the vegetables in a uniform dice, that way each bite of salsa will contain a little of everything. After dicing the onion, place it in a colander and run cold water over it (this technique reduces the onion after taste). Mix the tomatoes, tomatillos, and onion in a medium sized bowl. Toss. Add the garlic and the lime juice. Stir in the cilantro and add enough salt to taste (approximately 1 - 2 tsp). Allow the salsa to sit for 30 minutes or so for the flavors to mingle! Enjoy!
