Big, beautiful artichokes are in all the local markets right now. Their prices are so low, it's scandalous! As a result, we've had a lot of artichokes for dinner recently. Get while the gettin's good, is what I say.
This homemade mayonnaise is an excellent dip for artichoke leaves. I've been making this mayonnaise for quite sometime now but I had two batches of mayo fail me (horror of horrors)! I think I found my mayonnaise mojo again.
I had to revamp my technique for my Vita-mix, as it's much more powerful than a food processor. Here are a few tips for success when making mayo in a high-speed blender----- In my Vita-mix, I whip the first ingredients together (eggs, lemon juice, etc) and bring the variable speed to about 8. With the motor running, I drizzle in the oil, not too slow (like I do with my cuisinart) because it emulsifies too fast, and not too fast, or it won't emulsify.
IF you find yourself in a predicament (curdled, or not emulsified), what I've found to be the best method for saving the mayo is to pour the whole thing out into a measuring cup, place another whole egg in the blender, and slowly dribble in the failed mayo mixture from the measuring cup. It should emulsify and turn out fine. Here are some other tips for making your own mayo.
